Sooji Uttapam (Semolina Pancake)

Sooji uttapam or South-Indian style semolina pancake is a great way to make children love healthy food. Loaded with chopped veggies, this uttapam is packed with protein, vitamins and minerals yet is low in fat. Its tart undertone is a hit among my kids while they love the playful crunch of the veggies. No wonder, it has become my go-to recipe for their school lunch or when they bring friends at home. Serve it with ketchup or spicy chutney and turn healthy eating into super fun for kids!
