Ingredients
  

  • 1 lb (about 4-5) tomatoes
  • ¾-1 lb (about 1) yam
  • ½, diced sweet onion
  • 2-3 garlic cloves
  • 3-4 cup water
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp coconut milk

Method
 

  1. Cut the tomatoes into 4 pieces
  2. Peel and cut yam into smaller pieces
  3. Place tomatoes, yam, sweet onion, garlic cloves, water, salt and black pepper into a large saucepan (approximately 3 quarts) and cover with lid
  4. Boil on medium flame until all of the vegetables are soft for about 10-15 minutes
  5. Turn off the flame and cool
  6. If using hand-blender, blend; if using a normal blender, blend and strain
  7. Boil on high flame, add coconut milk and turn off flame
  8. Serve hot with croutons
  9. **Note: Using yam in this soup naturally makes it sweeter, creamier and gives it a buttery taste.
