Ingredients
  

  • 1 cup frozen corn
  • 1/4, diced green pepper
  • 1/2 medium diced tomato
  • 1/2 lemon
  • 1, diced green onion
  • 1/2, diced avocado
  • 1/4, diced onion
  • 1 tablespoon vegetable oil or olive oil
  • 1 tablespoon fresh, chopped cilantro
  • 7-8 oz can black beans
  • pinch salt
  • pinch black pepper
  • pinch red pepper

Method
 

  1. Put frozen corn in microwave for 30 secs.
  2. Put green pepper, corn, tomato, black beans, green onion, avocado, onion, cilantro in a medium bowl.
  3. Squeeze lemon.
  4. Add oil.
  5. Sprinkle in a pinch of salt and pepper and add red pepper.
  6. Mix all the ingredients together.
  7. Serve.
