Gluten-Free Tabbouleh
Tabbouleh is undoubtedly one of my favorite salads from the Middle Eastern origin. However, now I see many people moving to a gluten-free diet which is what inspired this dish. Instead of using bulgur or couscous like the original tabbouleh uses, I swapped it with quinoa which is a much healthier option and it keeps you full for a longer period of time! [Read more…]

All-in-One Salad
Every year when school goes back into session, I always have a hard time keeping track of my meals while I’m running across campus to reach my classes on time. However, salads are the perfect option that fill your tummy without leaving you with that terrible groggy feeling that usually follows an unhealthy meal. [Read more…]
Strawberry Spinach Salad
Salads are undoubtedly my go-to-meals during the summer because I’m always out and about whether its with family, friends or school-related activities. They’re super easy to prepare, they’re good for your body and easy on the wallet too!
Recently my friend and I were talking about her immense dislike for spinach. She told me how she doesn’t like the plastic-like taste of spinach and the bitter aftertaste it leaves in her mouth. Coincidentally, I was eating my strawberry spinach salad so I forced her to eat a bite of it after catching her ogling at it with disgust. I was expecting her to spit it out immediately but surprisingly she quietly chewed and once she was done, she gave me a bright smile and snatched my salad bowl from me only to devour it all.
Cucumber Salad with Tomatoes and Onion
My family loves to spend time in my sister-in-law’s place. Apart from her warm welcome, it’s her garden which serves as the prime attraction, especially for my little devils since they get lots of space to run around an materialize their mischiefs. But I fell in love with the garden owing to the luscious veggies growing in it. Each veggie always makes me wonder the wonderful dishes I could have whipped up if I had one such garden in my house. So, when she came to my house with a bag full of her garden-fresh Armenian cucumbers, I was delighted. So here I am with a cucumber salad recipe made from those very juicy fruits.
Pasta Salad with Tofu
As a vegetarian, tofu has always been a huge part of my diet as a substitute for meat products in order to get my daily dose of complete protein when I’m not eating lentils. Although many people believe that tofu is tasteless, they are unaware that taste can be added to it by marinating it with different spices. This tofu pasta salad recipe shows a good way to fuse Italian flavors in the traditionally flavorless Chinese tofu to create a pasta salad with a new twist. [Read more…]
Smiley Face Salad
My cousins are always complaining about not wanting to eat salad. I tried many different options. I added pasta to the salad, but they ate only the pasta. I tried adding croutons to the salad, but again they only ate the croutons. Consequently, I decided that I had to do something that would tempt them to eat it. I decided to make a face using different vegetables. Using lettuce as the skin, tomatoes as the eyebrows, black olives as the eyes, baby carrots as the nose, and cucumbers and red bell peppers as the mouth, I was able to make a decent looking face.
