As a vegetarian, tofu has always been a huge part of my diet as a substitute for meat products in order to get my daily dose of complete protein when I’m not eating lentils. Although many people believe that tofu is tasteless, they are unaware that taste can be added to it by marinating it with different spices. This tofu pasta salad recipe shows a good way to fuse Italian flavors in the traditionally flavorless Chinese tofu to create a pasta salad with a new twist.

Ingredients
- rotini pasta - 2 cup, tri-colored
- baby spinach - 1 cup, (chopped)
- tomato - ½ cup, (chopped)
- bell pepper - ½ cup, (chopped)
- onion - ½ cup, (chopped)
- green onion - 1/3 cup, (chopped)
- olive - ½ cup, (sliced)
- tofu - 2 cup, (diced)
- Dressing
- clove garlic - 2, (crushed)
- olive oil - 2 tablespoon
- lemon juice - 2 tablespoon
- salt - ½ teaspoon
- black pepper - ½ teaspoon
- sugar - 1 teaspoon
- water - 2 tablespoon
- red pepper flakes - ½ teaspoon
Instructions
- Boil pasta according to package (al dente)
- Mix all of the dressing ingredients together in a small bowl and add the diced tofu inside the bowl to marinate it for approximately 10 minutes
- Cut all of the vegetables for the pasta salad and add to another bowl
- Add pasta and marinated tofu (dressing) to the vegetable bowl
- Toss gently and well
- Serve immediately
