Corn on the cob has been one of the simplest and yum ‘go-to’ side dish for cookouts and BBQ parties. While the classic pairing of butter with grilled sweet kernels can never go wrong, a desi twist makes it more fun! Chili-lime rubbed grilled corn on the cob is a typical Indian street food which you’ll find with the onset of monsoons. In this Indian version, the slightly charred plump corn kernels are spiked with the flaming heat of chili powder which hits the back of your palate and lingers. The citrusy tartness tames down the heat and turns this side dish into a sublime indulgence. Once you try it, you’ll never stay sated with just a blob of butter on your grilled corn!
Step by Step Photos: Grilled Corn on the Cob – Indian Style Recipe
1. Mix the salt and red pepper in a plate and set aside.
2. Remove husk from the corn cob
3. Heat the gas stove to medium high, open flame. Roast the corn until slightly charred with rotating at every 5-10 seconds interval until all the sides are roasted.
4. Once kernels turning brown, remove from the flame.
5. Put a half of lime and dip into the spice mix and rub it all over the corn.
6. Enjoy!

- fresh ear of corn - 1
- red chili powder - 1/2 tsp
- salt - 1/4 tsp
- lime - half
- butter - optional
