Ingredients
  

  • 1 tsp olive oil
  • 1/2, chopped tomato
  • 2, chopped bell pepper
  • 5-6, grated carrot
  • 1/2 cup scrambled paneer or tofu
  • to taste salt
  • to taste black pepper
  • optional cheddar cheese
  • mustard
  • 6 hot dog buns
  • ketchup

Method
 

  1. Preheat oven to 350 degrees F
  2. Heat oil in a medium saucepan over medium-low heat
  3. Add tomatoes, bell peppers, and carrots, stirring occasionally until they are softened
  4. Add a dash each of salt plus black pepper as well as paneer (tofu) and mix well.
  5. Remove from heat. Do not overcook. Keep them crunchy.

  7. Place hot dog buns on the baking pan.
  8. Spread ketchup evenly over buns
  9. Stuff veggies mixture into the buns
  10. Sprinkle the cheese on top.
  11. Transfer to oven and bake until cheese melts and begins to brown.
  12. Remove from oven
  13. Allow to cool slightly.
  14. Drizzle mustard over each hot dog bun.
  15. Serve.
