Ingredients
  

  • 2 cup tri-colored rotini pasta
  • 1 cup (chopped) baby spinach
  • ½ cup (chopped) tomato
  • ½ cup (chopped) bell pepper
  • ½ cup (chopped) onion
  • 1/3 cup (chopped) green onion
  • ½ cup (sliced) olive
  • 2 cup (diced) tofu
Dressing
  • 2, crushed clove garlic
  • 2 tablespoon olive oil
  • 2 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar
  • 2 tablespoon water
  • ½ teaspoon red pepper flakes

Method
 

  1. Boil pasta according to package (al dente)
  2. Mix all of the dressing ingredients together in a small bowl and add the diced tofu inside the bowl to marinate it for approximately 10 minutes
  3. Cut all of the vegetables for the pasta salad and add to another bowl
  4. Add pasta and marinated tofu (dressing) to the vegetable bowl
  5. Toss gently and well
  6. Serve immediately
