Ingredients
  

  • 4 lasagna noodles
  • marinara sauce
  • 1/2 cup mozzarella cheese
  • 7 oz ricotta cheese
  • salt
  • pepper
  • 4-5 oz frozen, (chopped, thawed and squeezed to remove water) spinach

Method
 

  1. Cook lasagna noodles according to package direction.
  2. Drain and lay the noodles onto the aluminum foil.
  3. Mix all the spinach, ricotta cheese, and mozzarella cheese well in a bowl.
  4. Spread the filling into the noodles and roll them up.
  5. Spread marinara sauce into the bottom of the baking dish. Put the roll ups to this dish.
  6. Pour marinara over the roll-ups.
  7. Sprinkle with mozzarella cheese.
  8. Cover with aluminum foil and bake at 450 for about 20 minutes.
  9. Uncover and bake for a few minutes until cheese is bubbly.
