Ingredients
  

  • 1 tsp vegetable oil
  • 1, small (chopped) white onion
  • 1 1/2, sliced stalk celery
  • 2, peeled and small diced red potatoes
  • 2, peeled and grated carrots
  • 1 1/2 cup water
  • 14 oz. can creamy corn
  • 1 cup (low or skim) milk
  • 1/4 tsp or to taste salt
  • to taste black pepper

Method
 

  1. Pour the vegetable oil in a saucepan and heat on a medium flame.
  2. Add onion and celery and cook for 5 minutes, stirring.
  3. Add water, potatoes and carrot. Bring to a boil.
  4. Turn down to low heat.
  5. Simmer until cooked (about 10-12 minutes).
  6. Add corn and milk and bring to a boil.
  7. Simmer for about  a few more minutes.
  8. Add salt and black pepper.
  9. Serve.
