Ingredients
  

  • 8 oz bow-tie pasta
  • 1 tbsp oil
  • 1 medium (diced) sweet onion
  • 3-4, minced garlic cloves
  • 4-5, diced tomatoes
  • 1 cup broccoli florets
  • 1 cup (red/green) bell pepper
  • 5-6, sliced button mushroom
  • 14-15, sliced olives
  • 4 tbsp tomato sauce
  • 1 tsp oregano leaves
  • 1 tsp (dry) or 2 tbsp, (fresh) basil leaves
  • 2 tsp Italian seasoning
  • 1 tsp chili flakes
  • 1 tsp salt

Method
 

  1. Boil pasta to al dente according to package directions along with 1 tablespoon salt
  2. Drain pasta and set aside
  3. Heat oil in a skillet
  4. Add diced sweet onion to the skillet and sauté for 1-2 minutes
  5. Add minced garlic cloves to the skillet and sauté for 1-2 minutes
  6. Add diced tomatoes to the skillet and sauté for 2-3 minutes
  7. Add broccoli florets, bell pepper, mushroom to the skillet and sauté for 2-3 minutes
  8. Add olives, tomato sauce, oregano leaves, basil leaves, Italian seasoning, chili flakes and salt to the skillet and sauté for 1-2 minutes
  9. Serve with garlic bread
