Ingredients
  

  • 6 oz baby spinach
  • 10-12 strawberries
  • 4 tbsp (shelled) walnuts
Dressing:
  • 2 tbsp balsamic vinegar
  • 2 tbsp apple cider vinegar
  • 3 tbsp strawberry jam
  • 2 tbsp extra-virgin olive oil
  • ½ tsp dijon mustard
  • ¼ tsp black pepper

Method
 

  1. Put balsamic vinegar, apple cider vinegar, strawberry jam, extra-virgin olive oil, Dijon mustard and black pepper in a bowl, whisk together and keep aside
  2. Microwave the walnuts for 30 seconds OR dry-roast 1-2 minutes to enhance the flavor
  3. Quarter the strawberries
  4. Put strawberries, baby spinach, walnuts and dressing into a bowl and toss
  5. Divide evenly into 4 plates and serve immediately
