Ingredients
  

  • 1 cup pure-quinoa
  • 1 ¾ cup vegetable broth
  • 1 cup (chopped) cucumber
  • 1 cup (chopped) tomato
  • ½ cup (chopped) onion
  • 1 ½ cup fresh, (chopped) parsley
  • ½ lemon or 1 tbsp lemon juice lemon
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Put the vegetable broth and quinoa in a saucepan and boil for about 10-12 minutes until the quinoa softens. After it comes to a boil, cook on a medium flame
  2. While the quinoa is boiling, chop the cucumber, tomato, onion and parsley and set aside in a container
  3. After the quinoa boils, add it to the container containing the vegetables
  4. Add lemon juice, salt and black pepper to the container
  5. Mix well and serve
