Ingredients
  

  • 1/2 seeded diced cucumber
  • 1/2, diced red bell pepper
  • 2, diced roma tomatoes
  • 1/2, diced optional zucchini
  • 1/4 cup crumbled feta cheese
  • 5-7, chopped optional peperoncini
  • 1/4 cup pitted black olives or Greek kalamata olives
  • 1 tsp optional red wine vinegar
  • 2 tsp lemon juice
  • 3/4 tsp dried oregano
  • to taste salt
  • to taste black pepper
  • 2, halved warmed whole wheat pita breads
  • a few lettuce leaves

Method
 

  1. Combine the cucumber, red bell pepper, tomatoes, zucchini, feta cheese, peperoncini, and olives in a bowl.
  2. Whisk the vinegar, lemon juice, oregano, salt and pepper in another bowl.
  3. Pour over vegetables and toss to mix.
  4. Using slotted spoon, transfer salad mixture to pita bread halves.
  5. Serve immediately.
  6. NOTE: If you don't want sour, you can omit peperoncini and Greek kalamata olives and use black olives.
