Ingredients
  

  • 1 cup wheat flour atta
  • 1 cup all purpose flour
  • 1/4 cup semolina
  • 1/2 spoon carom seeds ajwain
  • 1 spoon salt
  • 1/2 cup oil

Method
 

  1. Mix all the ingredients above and add enough water to knead into a hard but smooth dough.
  2. Set aside for 30-45 minutes.
  3. Break into small pieces (about 40) and roll into small sized circles. (puri size)
  4. Using a fork, poke small holes into each circle. This will ensure the matri remains crispy and does not inflate.
  5. Fry until it has turned a golden brown. Be sure to fry it long enough for optimal crispiness.
