Normal kids don’t necessarily enjoy eating vegetables, well at least not willingly but they do LOVE pasta! As a kid, I always felt a connection with pasta since they came in different shapes and sizes so I thought of them as toys and would play with them during my meals. My mom used this to her advantage because while I was distracted by my “toys”, she’d feed me veggies in between bites.
After growing up, I realized how I was being fooled all along and how my mom slyly fed me those veggies. Years later, we still use the same tactic to feed the kids in my family veggies except this time, we mix the veggies and the bow-tie pasta together and flavor it so the kids actually enjoy eating it! Let me introduce you to a great recipe of veggie bow-tie pasta with you all!
Veggie Bow-Tie Pasta

Ingredients
- bow-tie pasta - 8 oz
- oil - 1 tbsp
- sweet onion - 1 medium, (diced)
- garlic cloves - 3-4, (minced)
- tomatoes - 4-5, (diced)
- broccoli florets - 1 cup
- bell pepper - 1 cup, (red/green)
- button mushroom - 5-6, (sliced)
- olives - 14-15, (sliced)
- tomato sauce - 4 tbsp
- oregano leaves - 1 tsp
- basil leaves - 1 tsp, (dry) or 2 tbsp, (fresh)
- Italian seasoning - 2 tsp
- chili flakes - 1 tsp
- salt - 1 tsp
Instructions
- Boil pasta to al dente according to package directions along with 1 tablespoon salt
- Drain pasta and set aside
- Heat oil in a skillet
- Add diced sweet onion to the skillet and sauté for 1-2 minutes
- Add minced garlic cloves to the skillet and sauté for 1-2 minutes
- Add diced tomatoes to the skillet and sauté for 2-3 minutes
- Add broccoli florets, bell pepper, mushroom to the skillet and sauté for 2-3 minutes
- Add olives, tomato sauce, oregano leaves, basil leaves, Italian seasoning, chili flakes and salt to the skillet and sauté for 1-2 minutes
- Serve with garlic bread
