Now that summer’s here, everyone’s goal is to load up on healthy food and exercise so they can get bikini/swimsuit ready. Plus no one really wants to eat anything due to this heat and prefer to stick to a light diet so they don’t experience the usual “food-coma” that would hinder their fitness regime.
Just like the rest of the world, I’m also in my get-back-into-shape mode which always causes me to argue with my mom because she’s bent on feeding me anything and everything while I prefer to eat fruits and drink juices during the summer. With this little invention of ours, we managed to meet in the middle and still stick to both of our goals! These vegetable tortilla wraps were a healthy way to fill up my tummy and satisfy my mom as well!
Vegetable Tortilla Wrap
Serving: 4
Prep Time: 10-15 minutes
Ingredients
- tortillas - 6 fajita size (6 inch)
- cabbage - ½ cup shredded
- carrots - ½ cup shredded
- lettuce - 2 cups chopped
- mayonnaise - 1 tablespoon
- ketchup - 1 tablespoon
- Dijon mustard - 1 tablespoon
- sour cream - 1 tablespoon
- ** tortillas can be substituted with pita bread as a healthier option
Instructions
- Mix mayonnaise, ketchup, Dijon mustard and sour cream in a bowl
- Add shredded cabbage and carrots to the bowl with the condiments’ mixture
- Mix well
- Heat tortillas so they are soft
- Evenly spoon vegetable mixture onto the 6 tortillas
- Place the lettuce evenly among the tortillas
- Carefully roll the tortillas, cut diagonally in half and serve
