It was last few weeks ago when I tried my hand on preparing Kulfi ice cream at my family get-together. Though skeptical initially about how it will turn out, it was well received and served as a comforting finale to the typical spicy Indian dinner. Creamy yet grainy, its unique texture is in perfect sync with the exotic flavorings of cardamom, saffron and pistachios. The slow-simmering of milk for long hours imparts a nutty caramelized overtone to the ice cream, making it stand out among any regular frozen desserts. [Read more…]
Microwaveable Besan Barfi (Gram Flour Sweet)
If you remember my previous post about the Besan Barfi, then you know how much I’ve loved this sweet ever since I was a kid. But nowadays, everyone is so busy trying to balance their personal and professional lives that we hardly get time to cook leisurely, let alone spend half-an-hour making a dessert! So when I came up with this, I fully embraced my inner lazy self and cut down the ‘cooking’ time by 2/3! And plus, standing on top of a stove-top in this blazing weather really isn’t my thing either so it’s the best of both worlds! [Read more…]
Rice & Makhane Ki Kheer (Rice & Lotus-Seed Pudding)
Usually summer brings us a lot of sunshine but this year, mother nature seems to have changed up the cycle a bit! Instead of the usual scorching sun, we’re being given an abundant amount of showers and the oh-so-icky humidity. I’ve always disliked humidity but the rain has it’s pros (although sometime they’re hard to see especially when you’re itching to take a dip in the pool). One of the biggest pros (at least in my household) is that my mom makes kheer, which is an Indian rice pudding. The creamy blend of milk and rice and the slight bite from the nuts make this recipe one of the few reasons I actually look forward to mother nature’s showers! [Read more…]
Chocolate Chip Cookies
Crunchy edges, soft squidgy interior with gooey melted chocolate studs – it’s the best chocolate chip cookies I ever created in my kitchen. We actually finished half of freshly baked cookies as soon as they were out of the oven. Though cooked without any egg, you’ll hardly miss it in these baked goodie. But there’s always a scope to use egg replacer if you are still skeptical about how these eggless cookies will taste. [Read more…]

With Holi, the festival of color, coming up in a few days, my home is teaming with joy and is ready to kick-start one of our favorite festivals. Every year, we color the town and ourselves with various types of colored powder and water guns! One of the traditional foods that each Holi celebration has to have is the gunjiya (gujiya). Gajar Ka Halwa (Carrot Dessert)
Winters have never been excessively cold here but due to the recent cold front, I’ve been eating all sorts hot-off-the-stove foods to warm up my chilled body. In this weather, you practically need all of your meals to be scorching hot, well not hot enough to burn your tongue and disable your taste buds but you know what I mean 🙂
One dish that my mom makes is gajar ka halwa which is the perfect sweet dish for this cold weather. The best quality about this dessert is that it can be stored in the fridge for about a month as long as you only take out and heat the portion that you’re going to eat right away. [Read more…]
