My love for peanuts has no bounds. Apart from snacking on them during my leisurely hours, I am always on a lookout for a chance to use peanuts in a variety of dishes and enjoy them in every way possible. Whether I use them in desserts or blend them in a curry, peanuts seem to add a rustic essence to the delicacy and turn every helping into decadence. But it’s the simple peanut coriander chutney which pleased my taste buds the most! Its lip-smacking… it’s refreshing… it’s full of aroma – it has all the qualities one looks for in perfect chutney!
Strawberry Spinach Salad
Salads are undoubtedly my go-to-meals during the summer because I’m always out and about whether its with family, friends or school-related activities. They’re super easy to prepare, they’re good for your body and easy on the wallet too!
Recently my friend and I were talking about her immense dislike for spinach. She told me how she doesn’t like the plastic-like taste of spinach and the bitter aftertaste it leaves in her mouth. Coincidentally, I was eating my strawberry spinach salad so I forced her to eat a bite of it after catching her ogling at it with disgust. I was expecting her to spit it out immediately but surprisingly she quietly chewed and once she was done, she gave me a bright smile and snatched my salad bowl from me only to devour it all.
Focaccia Bread
I love the smell of homemade bread! Whenever I make this focaccia bread, it leaves a heavenly aroma drifting through my home. Often bread can be a bit difficult to make, as it requires a long process, but this recipe is definitely easy, even for those who have not attempted to make bread at home. [Read more…]
Mushroom-Garlic Toast
Garlic and mushrooms go hand in hand. No wonder the classic dish of garlic-mushrooms on toast is popular all over the world. There is something about the combination of crusty bread, rustic-flavored mushrooms and the aromatic garlic which makes this simple recipe a winner! I took a step further and sautéed the mushrooms with parsley and lemon pepper for more flavors and the outcome was indeed super-delicious! Next time, I’m planning to add a dollop of crème fraiche or clotted cream on top to fill it with creamy goodness. [Read more…]
Veggie Bow-Tie Pasta
Normal kids don’t necessarily enjoy eating vegetables, well at least not willingly but they do LOVE pasta! As a kid, I always felt a connection with pasta since they came in different shapes and sizes so I thought of them as toys and would play with them during my meals. My mom used this to her advantage because while I was distracted by my “toys”, she’d feed me veggies in between bites. [Read more…]
Pudina Raita (Mint Yogurt)
During the summer, all I really want to eat is yogurt because it is light and it keeps you cool as well! I recently tried Greek yogurt and fell in love with it. After all, who wouldn’t like a yogurt that doesn’t come with added preservatives and chemicals and is actually healthy? [Read more…]
Cucumber Salad with Tomatoes and Onion
My family loves to spend time in my sister-in-law’s place. Apart from her warm welcome, it’s her garden which serves as the prime attraction, especially for my little devils since they get lots of space to run around an materialize their mischiefs. But I fell in love with the garden owing to the luscious veggies growing in it. Each veggie always makes me wonder the wonderful dishes I could have whipped up if I had one such garden in my house. So, when she came to my house with a bag full of her garden-fresh Armenian cucumbers, I was delighted. So here I am with a cucumber salad recipe made from those very juicy fruits.
Honey-Chili Potatoes
Growing up, I’ve always enjoyed eating Indo-Chinese cuisine which is basically Chinese food with a touch of Indian spices and flavors. This honey-chili potatoes recipe however blends in a little bit of American into the traditional Indo-Chinese cuisine making it even more intricate. [Read more…]
Blackberry-Banana Protein Shake
My hubby Lalit is a health freak! He never fails to kick start the day with a rigorous workout session (unlike a lazy bone like me!) and needs his protein shake right after it. Indeed protein shakes are great for building up muscle masses as well as strengthening them too. It supplies him with the protein which he misses out in our vegetarian diet and keeps him charged up till lunch time.
However, a milk shake with just protein powder is too bland to enjoy! So I prefer to toss in few fruits to jazz it up and load with extra protein. Not to mention, a fruit-infused protein shake works as great refreshment for him after a sweaty workout.
Chole Chaat with Potato Patties
Chaat is an Indian delicacy that is pleasured by all. This version of the chaat recipe combines chole with the classic potato patty. I have cooked this recipe in my home for many years and the recipe seems to taste better each time. [Read more…]
