French beans have always been my favorite type of beans and well, who doesn’t like tomatoes? It’s truly the best of both worlds when the beans’ crunchiness combines with the juices from the tomatoes; it’s like a party for your taste buds! And the added kick from the home-made vinaigrette does a wonderful job pulling all of the flavors together leaving a very satisfied tummy!

French Bean and Tomato Salad with Vinaigrette

Ingredients
- french beans - 2 cup, (trimmed & cut into 2 inch pieces)
- cherry tomatoes - 12, (halved)
- red onion - ¼, (chopped)
- salt - 1 tsp
- water - 1 quart
- Dressing
- balsamic vinegar - 1 tbsp
- olive oil - 1 tbsp
- Dijon mustard - ½ tsp
- basil - 1 tbsp, fresh, (chopped)
- parsley - 1 tbsp, fresh, (chopped)
- salt - ¼ tsp
- black pepper - ¼ tsp
Instructions
- Boil water in a saucepan and add 1 tsp salt to it
- While the water is boiling, trim and cut the french beans, cut the cherry tomatoes into halves, chop the red onion and set aside
- Put the french beans into the boiling water and blanch them for about 4-5 minutes until crisp tender
- Drain the french beans and shock them by putting them in ice cold water 2-3 minutes to retain the bright green color
- Drain the french beans again and set aside
- Mix the balsamic vinegar, olive oil, Dijon mustard, fresh basil, fresh parsley, salt and black pepper for the dressing in a container
- Add french beans, tomatoes and red onion to the dressing container
- Toss and serve
