Zucchini Pasta
With the amount of zucchini growing in our garden, we’ve been scrambling to come up with different ways to eat it all! I mean, it’d get pretty boring if you made and ate the same thing over and over again, right?! Well, I don’t know about you but I would! Nothing beats a little variety in life especially when it comes to food. And speaking of variety, what could be a better example than pasta? Pasta comes in all shapes and sizes, and now there’s the new fad of making pasta out of vegetables! I remember the very first time I saw pasta made out of vegetables, I scoffed and said what kind of ‘pasta’ is that? Little did I know that whoever came up the idea was a genius!
My mom made this zucchini pasta the other day and I actually fell in love. I’m usually fair-game to all types of cuisines but this was definitely a game changer! Rice & Makhane Ki Kheer (Rice & Lotus-Seed Pudding)
Usually summer brings us a lot of sunshine but this year, mother nature seems to have changed up the cycle a bit! Instead of the usual scorching sun, we’re being given an abundant amount of showers and the oh-so-icky humidity. I’ve always disliked humidity but the rain has it’s pros (although sometime they’re hard to see especially when you’re itching to take a dip in the pool). One of the biggest pros (at least in my household) is that my mom makes kheer, which is an Indian rice pudding. Mango Lassi
Mangoes are the ULTIMATE summer fruit! They’re in salads, drinks, ice-creams…you name it, and they’re there (and me too). As the biggest fan of the fruit, I pretty much devour anything and everything that has mangoes in it, regardless of the other ingredients that may be present. Holy Guacamole!
I’ve always loved avocado in my food whether it’s on pizza, sandwiches, anything! However, the best way to really use an avocado is to make some guacamole out of it. I’ve seen and tried a lot of different types of guacamole before I came across this recipe and now I swear by it! You’re probably thinking it’s guacamole, how many different variations could there possibly be? And you are right because you can pretty much make guacamole any way you wish to depending on what type of flavors you prefer. Suji Halwa (Semolina Dessert)
Navratri is a 9-day festival dedicated to worship the Hindu Goddess Durga. During these 9 days, the 9 different forms of Goddess Durga are worshiped. Every year on the 9th day of Navratri, we make a traditional offering to Goddess Durga of channe (chickpeas) and suji halwa (semolina dessert). Suji halwa is extremely easy to make and its delicious blend of roasted suji (semolina) and a variety of nuts make it a favorite among all age groups! One-Pot Minestrone Soup
As we finally bid adieu to this cold weather and prepare to welcome spring with our arms wide open, I thought why not say goodbye to winter and hello to spring in a different manner? This gave birth to the one-pot minestrone soup! I’ve always despised the process of using up different pots and pans to make a one-dish meal because it just seems so useless to cook one thing and have a ton of dishes to clean up afterwards. Hyderabadi Bagare Baingan (Hyderabadi Eggplant)
I’ve always been a big fan of eggplant regardless of what form it’s made it whether it’s made the Italian way as Eggplant Parmigiana, the North Indian way as the traditional Baingan ka Bartha, etc. However, my favorite way has to be the Hyderabadi Bagare Baingan which is small Indian eggplants stuffed and coated with various masala which packs a punch of taste in every single bite! Chole Bhature
Chole bhature is a North Indian dish that is liked by people of all origins. It is composed of a spiced chickpeas (chole) and soft, puffy, deep-fried bread (bhatura). Although chole is made using different methods in various parts of India, this is made using the typical North Indian way.
